Trowbridge, J. E. & Wandersee, J. H. (1998). Theory driven graphic organizers in J. J. Mintzes, J. H. Wandersee, & J. D. Novak (Eds.), Teaching science for understanding: A human constructivist view. (pp. 95-131). New York: Academic Press.
The chapter in the above book presents other graphic organizers along with concept maps. For example KWL, Concept Circles, Vee Diagrams, and Flow Charts. Further, there is a suggested format for concept map construction and evaluation criteria. Various forms of concept mapping are discussed such as a micromap, macromap, and a co-constructed map.

To learn the cognitive theory behind concept mapping and research into its development, this is a good book. It goes into detail of concept map construction and classroom applications.
